One of the greatest things about a CSA membership is the access to vegetables that you wouldn’t normally buy at the grocery store. I’ll admit it, prior to starting this Locavore journey, I was stuck in the routine of the “normal” veggies: lettuce, tomato, broccoli, carrots, lettuce, tomato, broccoli, carrots…and repeat. Not that there is anything wrong with any of those (in fact, I am a huge tomato fan!), but, it was easy, comfortable and I knew what would work with my daughter’s finicky tastes. Belonging to a CSA program and frequenting local farm markets has greatly broadened our vegetable horizons. We’ve tried new greens, discovered turnips and unanimously named a new family favorite: Bok Choy.

Bok Choy is classified as a cabbage but more closely resembles white celery stalks with lettuce-like leaves. It is not “stringy” like celery and when cooked has the nice tender texture of a cabbage. Our cooking method of choice is to lightly saute in olive oil with a touch of salt & pepper. I might splash with balsamic, but my smaller counterpart prefers hers without the final garnish. Either way, it’s delicious! We’ve paired it with chicken, beef and just munched this yummy dish all on its own.
Next time you’re in your local farm market ask for some Bok Choy…it’s 5-year-old approved! And we all know how much that endorsement means at meal time.

Couldnt agree more. My children adore bok choy in an Asian style chicken noodle soup. Take chicken broth, Chinese style noodles and perhaps some wontons. Add bok choy and tofu puffs. So easy and delicious.
